7. The Cookbook Restaurant 1827 N. Pearl Street

Springfield resident Brandon Byers plans to open The Cookbook Restaurant at 1827 N. Pearl St in spring 2017. With an aim to provide happiness and joy through, food, music and art, The Cookbook will offer everything from burgers and fries to American soul food including shrimp and grits, and chicken and waffles. The restaurant will also include a small garden where vegetables such as peppers, squash, zucchini and tomatoes can be grown.

Interior improvements being made to the space include a dining room, lounge area and bar as well as a small stage for live entertainment. In addition, the interior has been opened up so people can socialize and enjoy each other’s company. According to Byers, “The menu is going to change twice a year and it’ll look like ripped pages out of a cookbook. “We want locals to submit their recipes and put them on the menu so people feel like they’re apart of the business.”

8. 8th Street Fast Café 1818 North Davis Street

Murat Ergisi and Mehmet Sunu are in the process of retrofiting a former gas station, at West 8th Street, Davis Street and Interstate 95, into a restaurant called the 8th Street Fast Café. When complete, the 1,604-square-foot restaurant will serve sandwiches, burgers, fries, wings, pizza, salads and more.
